Low Country Boil

TIP: Try this dish with red or green curry paste for a cool twist. Whisk in 2 to 3 tablespoons in place of the creole seasoning and enjoy.

Step-by-step instruction without your screen going to sleep

  • 2 pounds red bliss potatoes, diced
  • 3 ears corn, cut crosswise into thirds
  • 14 ounces smoked sausage or kielbasa, sliced into 1-inch pieces
  • 4 cups water
  • 2 1/2 tablespoons creole seasoning
  • 1 lb (21-30 count) medium shrimp, peeled and deveined

Utensils

  • Step 1

    Place the potatoes, corn, sausage, water, and creole seasoning into the pot and stir. Assemble pressure lid, making sure the pressure release valve is in the SEAL position. 

  • Step 2

    select PRESSURE and set to HI. Set time to 5 minutes. Select START/STOP to begin. 

  • Step 3

    When pressure cooking is complete, quick release the pressure by turning the pressure release valve to the VENT position. Carefully remove lid when unit has finish releasing pressure.  

  • Step 4

     Stir in the shrimp.

  • Step 5

    Select SEAR/SAUTÉ and set to MD:LO. Simmer for about minutes, until the shrimp is cooked through. 

  • Step 6

    When cooking is complete, serve immediately.
