Loaded Cheesy Cauliflower
This super simple recipe has all the flavors of a loaded baked potato and only takes 10 minutes to prep. The creamy, cheesy sauce will have kids asking for a second helping of vegetables at dinner. It’s hearty enough to enjoy as a meal or pairs well with a savory protein main.
Tip: For a vegetarian option, substitute bacon for sauteed tempeh “bacon” bits.

- 4 cups cauliflower florets, cut in 1-inch pieces
- 2 tablespoons unsalted butter
- 2 tablespoons all purpose flour
- 2/3 cup sour cream
- 1/4 cup heavy cream
- 2 cloves garlic, peeled, minced
- 1 1/2 cup cheddar cheese
- 1/2 cup bacon bits, divided
- 1/4 cup green onions, chopped, divided
- Kosher salt. as desired
- Ground black pepper, as desired
Utensils
- Medium Bowl
- Silicone Spoon
- Steamer Basket

Step 1
Add 1 cup water to the PossiblePan, set over medium heat and bring to a boil.

Add cauliflower to steamer basket. Place the basket in the pan and place the lid on the pan. Steam the cauliflower for 8 to 10 minutes or until tender.

When cooking is complete, remove cauliflower from pan and discard water.

Place PossiblePan over medium heat. Add the butter, and cook until melted. Add the sour cream, heavy cream, garlic, half of the cheddar cheese, half of the bacon bits, and half of the green onions. Cook and stir until mixture thickens, about 3 minutes. Season with salt and pepper.

When cheese sauce is thick and creamy, add cauliflower back into the pan and mix to coat with cheese sauce. Turn off the heat and top with remaining cheddar cheese, bacon bits, and green onions and serve.
