Honey Mustard Crusted Pork with Brussels Sprouts and Creamy Scallion Rice

This dish came together quickly as I prepped for this cookbook. The pairing of pork and mustard is one of my favorites, and for some reason I always reach for Brussels sprouts when serving pork. The rice is something I make for my fiancée, Michelle, who is obsessed with rice, sour cream, and cheese, so it was kind of a no-brainer side dish. The perfect finishing touch for this dish would be a nice dollop of applesauce on the side, to help round out this delicious meal.

Variation Tip: Don’t have honey mustard? Use ranch dressing instead.

LEVEL 1 (BOTTOM OF POT)

  • 2 cups white rice
  • 4 cups chicken stock
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 3 scallions, thinly sliced

LEVEL 2 (BOTTOM LAYER OF RACK)

  • 1 pound Brussels sprouts, outer leaves removed, halved lengthwise
  • 1 tablespoon canola oil
  • Kosher salt
  • Freshly ground black pepper

LEVEL 3 (TOP LAYER OF RACK)

  • 4 (6- to 8-ounce) boneless pork chops
  • Kosher salt
  • Freshly ground black pepper
  • 2 tablespoons honey mustard
  • 1/4 cup garlic and herb bread crumbs

Utensils

  • Large Bowl
  • Aluminum Foil
  • Step 1

    Start with the Level 1 ingredients: Combine the rice and chicken stock in the pot. Season with salt and pepper and stir.

  • Step 2

    Place the bottom layer of the Deluxe Reversible Rack in the lower position, cover with a sheet of aluminum foil, and place the rack in the pot.

  • Step 3

    Prepare the Level 2 ingredients: In a large bowl, combine the Brussels sprouts and oil. Season with salt and pepper and toss until the sprouts are evenly coated. Place the Brussels sprouts on the foil.

  • Step 4

    Prepare the Level 3 ingredients: Season the pork chops with salt and pepper on both sides. Rub the top of each chop with the honey mustard, then top with the breadcrumbs, pressing to help them stick.

  • Step 5

    Slide the Deluxe Layer through the lower layer’s handles. Place the pork chops on the Deluxe Layer.

  • Step 6

    Close the lid and move the slider to STEAMCRISP. Select STEAM & CRISP, set the temperature to 390°F, and set the time to 10 minutes. Press START/STOP to begin cooking (PrE will display for about 20 minutes as the unit steams, then the timer will start counting down).

  • Step 7

    When cooking is complete, carefully remove the rack layers. Add the sour cream, cheddar cheese, and scallions (Level 1 ingredients) to the pot with the rice, stir to combine, and season with salt and pepper. Serve the rice with the pork chops and Brussels sprouts.
