High Protein Egg Cups

Step-by-step instruction without your screen going to sleep
- 4 large eggs, beaten
- ¼ cup whole milk
- ½ cup plain cottage cheese
- ½ cup shredded cheddar cheese, divided
- ½ cup chopped cauliflower
- Kosher salt, as desired
- Ground black pepper, as desired
- 1 pre-cooked chicken sausage patty, chopped in ¼-inch pieces
Utensils
- Blender
- Silicone muffin molds

Step 1
Place crisper plate in the 4-quart container, then place six silicone muffin molds on top.

Add eggs, milk, cottage cheese, ¼ cup cheddar cheese, cauliflower, salt, and pepper to a blender, and blend until well combined.

Transfer egg mixture evenly to each silicone mold, filling mold about ¾ full. Evenly distribute chicken sausage pieces amongst the egg batter, then top evenly with remaining ¼ cup cheddar cheese.

Step 4
Place the adapter on the container, then install the CRISPi PowerPod in the adapter. Press MODE until AIR FRY illuminates. Set time to 12 minutes, and press START to begin cooking.

When cooking is complete, remove PowerPod and allow egg cups to rest in container for 5-10 minutes. When cool enough to handle, remove molds and serve egg cups.
