What to Serve with Herb-Roasted Chicken

Herb-roasted chicken is best served at dinner or during family gatherings when there are plenty of people around to enjoy it together. It’s sure to please even the pickiest eaters because its flavor is mild enough not to overpower other dishes on the menu.

Mashed Potatoes

For a classic and easy pairing, try serving herb-roasted chicken with a simple side of mashed potatoes or creamy polenta. The rich creaminess of the potatoes or polenta will nicely complement the herbs and juices from the cooked chicken.

Roasted Vegetables

For a heartier meal, you can serve herb-roasted chicken alongside roasted vegetables such as carrots, parsnips and sweet potatoes. Roasting these vegetables in the same Ninja™ Foodi™ NeverStick® Essential PossiblePot™ as the chicken maximizes the flavor and allows them to soak up all the delicious herbs from the chicken.

Mixed Salad

A salad is also an excellent accompaniment to herb-roasted chicken. Try combining bitter greens like arugula or radicchio with tart fruits such as pears or apples for an added dimension of flavor.

Serving chicken with rice is a classic combination that can be enjoyed in a variety of ways. For instance, you can make a simple yet delicious stir-fry with chicken and vegetables over a bed of fluffy basmati rice.

You might prefer to mix the chicken with a spicy blend of soy sauce, garlic and ginger before serving it atop steamed jasmine rice for an unforgettable meal.

What To Do With Leftover Roasted Chicken

Herb-roasted chicken is so delicious, you may not end up with any leftovers. But if you do, you can use the chicken in a multitude of dishes and recipes to ensure none of it goes to waste.

To make herb-roasted chicken pasta, boil 8 ounces of penne pasta in salted water for 10-12 minutes or until al dente. Once done, strain the excess water and transfer to a large bowl. Add 2 tablespoons of olive oil, 1/2 cup of chopped fresh parsley, 1/4 cup of freshly grated Parmesan cheese, 1/4 teaspoon of salt and pepper each.

Mix thoroughly until everything is well combined then add your leftover herb-roasted chicken. You can even add alfredo sauce or vodka sauce to change up the flavor.

If you’re looking for quick meal ideas, sandwiches are a great option. Shred or slice up some leftover chicken and add it to your favorite bread. Top with the cheese and condiments of your choice. Herb-roasted chicken is super yummy on Hawaiian sweet rolls with a little barbecue sauce.

Making a salad with leftover cooked chicken is an excellent way to transform last night’s dinner into something new. Start by chopping up your herb-roasted chicken into chunks or strips before adding them to your favorite greens like spinach or romaine lettuce along with crunchy vegetables like bell peppers and cucumbers.

Garnish your salad with some nuts or seeds for added texture and flavor before drizzling on a homemade vinaigrette dressing or creamy avocado yogurt sauce.

Nachos are a fun but classic snack food that can be easily upgraded into an insanely delicious dinner option by adding leftover herb-roasted chicken and toppings like cheese, salsa, guacamole, refried beans, diced tomatoes and black olives. Use either store-bought chips or make your own using tortillas cut into small triangles and then baked until crispy; both options work equally well.

Soup or Chili

To make soup or chili with your leftover herb roasted chicken, start by sautéing onions and garlic in olive oil until they are fragrant before adding in canned tomatoes, beef broth, potatoes, carrots, beans and spices to create a flavorful base. Next, add the shredded leftover chicken before simmering for about 30 minutes until everything is tender and the flavors have melded together nicely. Serve the hearty soup topped with cheese, cilantro, diced red onion and tortilla chips for added crunch.

Stuffed Peppers

Herb-roasted chicken and rice make the perfect mixture for stuffed peppers. Halve some bell peppers and fill with diced-up chicken and rice, top with pasta sauce, add cheese and bake until golden brown.

Pizza Topping

Why not make your own pizza? Pile on your favorite ingredients with the herb-roasted chicken  for an Italian twist at dinner time.

Chicken Pad Thai

For those who are looking to make a delicious and nourishing meal with their leftover herb-roasted chicken, nothing beats the classic Asian dish of chicken pad thai. This is a quick and easy dish that can be prepared in under 30 minutes using some basic ingredients.

In addition to your herb-roasted chicken, you’ll need shrimp or tofu (optional), red onion, garlic cloves, eggs, bean sprouts, fish sauce, lime juice, tamarind paste (or substitute cider vinegar or brown sugar), peanuts and fresh cilantro. Also have on hand some rice noodles and vegetable oil for cooking.
