  • 1 whole fresh chicken (6–7 pounds/2.7kg))
  • 1/2 cup water
  • Juice of 2 lemons
  • 1 tablespoon whole black peppercorns
  • 5 cloves garlic, peeled, smashed
  • 2 sprigs fresh rosemary
  • 1 tablespoon canola oil
  • Kosher salt, as desired
  • Ground black pepper, as desired

    Remove packet of giblets, if included in cavity of the chicken. Tie legs together with cooking twine.
