Herb and Dijon Pork Chops

These herb and Dijon pork chops are an easy and delicious weeknight protein! Serve these pork chops with parmesan asparagus or zucchini fries for a full meal.

  • ¼ cup dijon mustard
  • 1 tablespoon minced fresh rosemary
  • 1 tablespoon minced fresh thyme
  • salt
  • freshly ground black pepper
  • 1 ½ lbs boneless pork chops 
  • 1/2 cup water

  • Step 1

    In a small bowl, mix together the mustard, rosemary, and thyme. Season with salt and pepper. Spread the herb mustard onto the pork chops. Set aside to marinate for about 20 minutes.   

  • Step 2

    Place the pork chops in the basket. Pout the water in the pot. Insert the basket into unit. Assemble the pressure lid, making sure the pressure release valve is in the SEAL position. 

  • Step 3

    Select PRESSURE and set to HIGH. Set time to 2 minutes. Select START/STOP to begin.  

  • Step 4

    When pressure cooking is complete, quick release the pressure by moving the pressure release valve to the VENT position. Carefully remove the lid when the unit has finished releasing pressure. 

  • Step 5

    Remove the basket and carefully pat the pork chops dry with a paper towel. Drain any remaining liquid from the pot and wipe clean. Reinsert the basket into the unit.  

  • Step 6

    Close the crisping lid. Select AIR CRISP, set temperature to 390 F, and set time to 15 minutes. Select START/STOP to begin, flipping over the pork chops after 7 or 8 minutes.
