Gochujang BBQ Glazed Ribs

LEVEL 1 (BOTTOM OF POT)

  • 1 cup white rice, rinsed
  • 2 cups water or chicken stock
  • 1 teaspoon kosher salt

LEVEL 2 & LEVEL 3 (BOTTOM + TOP LAYERS OF RACK)

  • 3 lb baby back ribs, cut into individual ribs, membrane removed
  • 1 tablespoon kosher salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons garlic powder

GOCHUJANG BBQ SAUCE

  • 1/3 cup brown sugar
  • 1/3 cup apple cider vinegar
  • 1/4 cup low-sodium soy sauce
  • 4 tablespoons gochujang paste
  • 2 tablespoons tomato paste
  • 2 teaspoons ground ginger
  • 2 teaspoons garlic powder

  • Step 1

    Place all Level 1 ingredients into the pot and stir to combine.

  • Step 2

    Generously season the ribs on all sides with the salt, pepper, and garlic powder.

  • Step 3

    Place the bottom layer of the Deluxe Reversible Rack in the lower position, then place in the pot. Add half of the ribs to the rack.

  • Step 4

    Slide the Deluxe Layer through the lower layer’s handles, then add the remaining ribs to the Deluxe Layer.

  • Step 5

    Close lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 390°F, and set time to 25 minutes. Press START/STOP to begin cooking (PrE will display for approx. 7 minutes as the unit steams, then the timer will start counting down).

  • Step 6

    While the ribs cook, make the BBQ sauce. In a medium bowl, combine the brown sugar, apple cider vinegar, soy sauce, gochujang paste, tomato paste, ginger, and garlic powder, then set aside.

  • Step 7

    When cooking is complete, open the lid and carefully take out the rack layers. Move the ribs from the bottom layer to the top and vice versa.

  • Step 8

    Brush the ribs with the prepared BBQ sauce and place the Deluxe Reversible Rack layers back in the pot. Set the timer for an additional 5 minutes and cook the ribs until tender and caramelized. Depending on the size of your ribs, you may need an additional 5 minutes.

  • Step 9

    When cooking is complete, open the lid and remove the rack layers with the ribs. Brush the ribs with any remaining BBQ sauce, then serve with the warm rice and enjoy.
