Garlic Roasted Potatoes

- 3 pounds Small red or white potatoes, cut in halves or quarters
- 1/4 cup olive oil
- 1 1/2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 6 cloves garlic, peeled, minced
- 2 tablespoons fresh minced parsley

Step 1
Preheat oven to 400°F.

In a large bowl, add the potatoes, olive oil, salt, pepper, and garlic and toss to coat.

Transfer the pan to the oven and cook uncovered for 45 minutes to 1 hour, or until potatoes are browned and crisp. Make sure to toss the potatoes every 20 minutes to ensure even cooking.

When cooking is complete, remove potatoes from oven and toss with parsley and salt. Serve hot.
