- 1 pound Brussels sprouts, trimmed, cut in half
- 1 tablespoon vegetable oil
- 1 teaspoon kosher salt, plus more for seasoning
- 1 cup quinoa
- 1 1/2 cups water
- 1 pound flank steak
- Salt and black pepper, for seasoning
- 6 tablespoons unsalted butter, divided

Step 1
In a small bowl, toss together the Brussels sprouts, oil, and salt; set aside.

Place quinoa and water into the pot.

Place reversible rack in the pot over quinoa, making sure rack is in the higher position. Place Brussels sprouts on rack. Assemble pressure lid, making sure the pressure release valve is in the SEAL position.

Select PRESSURE and set to HIGH. Set time to 1 minute. Select START/STOP to begin.

While Brussels sprouts and quinoa are cooking, season steak liberally with salt and pepper.

When pressure cooking is complete, quick release pressure by moving the pressure release valve to the VENT position. Carefully remove lid when unit has finished releasing pressure.

Place the steak on the rack next to the Brussels sprouts. Place 3 tablespoons butter on top of the steak.

Close crisping lid. Select BROIL and set time to 8 minutes. Select START/STOP to begin.

After 8 minutes, flip the steak and toss the Brussels sprouts as needed. Add remaining butter on top of steak. Select BROIL and set time to 8 minutes. Select START/STOP to begin.

When cooking is complete, transfer steak to a cutting board and allow to rest 5 minutes before slicing. Serve with Brussels and Quinoa.
