Double Air-Fried Vietnamese Wings with Ginger Scallion Fries

  • 1 3/4 pounds fresh chicken wings
  • Nonstick cooking spray

MARINADE

  • 2 tablespoons fish sauce
  • 1 teaspoon chicken bouillon powder
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoons granulated sugar

COATING

  • 2 tablespoons all-purpose flour
  • 1 tablespoon corn starch
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon chicken bouillon

TOPPINGS (optional)

  • Lime juice
  • Peanuts
  • Fried garlic
  • Fresh cilantro

GINGER SCALLION FRIES

  • 1 pound frozen French fries

GINGER SCALLION SAUCE

  • 1 green onion, chopped
  • 1 clove garlic, peeled, minced
  • 1 teaspoon minced ginger
  • 2 tablespoons canola oil
  • 1/2 teaspoon kosher salt

    In a large bowl, add all marinade ingredients and whisk until combined. Then place the marinade and chicken wings in a large, resealable plastic bag.

  • Step 2

    Massage the outside of the bag to work the marinade over all parts of the chicken, then place the bag in the refrigerator for 4 hours to marinate.

    When the chicken is marinated, prepare the coating. In a large bowl, add all coating ingredients and whisk until combined.

    Remove the wings from the marinade and pat dry. Evenly coat the wings in nonstick cooking spray, then dip in the coating to evenly cover.

    Install a crisper plate in both baskets. Place the chicken wings in a single layer in each basket, then insert baskets in unit.

    Select Zone 1, select AIR FRY, set temperature to 350°F, and set time to 15 minutes. Select MATCH COOK to match Zone 2 settings to Zone 1 settings. Press START/PAUSE button to begin cooking.

    When cooking is complete, open the baskets and let the wings cool for 5 minutes. Reinsert the baskets in the unit. Select Zone 1, select AIR FRY, set temperature to 400°F, and set time to 15 minutes. Press START/PAUSE button to begin cooking.

  • Step 8

    When cooking is complete, remove wings from baskets and cover to keep warm.

  • Step 9

    Add the frozen French fries to both baskets, then insert baskets in unit. Select Zone 1, select AIR FRY, set temperature to 400°F, and set time to 20 minutes. Select MATCH COOK to match Zone 2 settings to Zone 1 settings. Press START/PAUSE button to begin cooking.

  • Step 10

    When 10 minutes remain on the Zone 1 timer, press START/PAUSE, remove baskets and shake fries. Reinsert baskets and press START/PAUSE to resume cooking.

    When cooking is complete, serve wings topped with lime juice, peanuts, garlic, and cilantro. Server with ginger scallion fries.
