Spicy Coconut Chicken Wings

  • 16 chicken drumettes (party wings) 
  • 1/4 cup  full-fat coconut milk
  • 1 tablespoon  sriracha 
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder 
  • Salt 
  • Freshly ground black pepper 
  • 1/3 cup shredded unsweetened coconut 
  • 1/2 cup all-purpose flour
  • Cooking oil spray 
  • 1 cup mango, cut into 1/2-inch chunks 
  • 1/4 cup fresh cilantro, chopped 
  • 1/2 cup red onion, chopped
  • 2 garlic cloves, minced
  • Juice of 1/2 lime

  • Step 1

    Place the drumettes in a resealable plastic bag.

  • Step 2

    In a small bowl, whisk the coconut milk and sriracha.

  • Step 3

    To the bag, add the sriracha–coconut milk mixture, onion powder, garlic powder, salt, and pepper. Seal the bag. Shake it thoroughly to combine the seasonings and coat the chicken. Marinate for at least 30 minutes, preferably
    overnight, in the refrigerator.

  • Step 4

    When the drumettes are almost done marinating, in a large bowl,
    stir together the shredded coconut and flour.

  • Step 5

    Dip the drumettes into the coconut-flour mixture. Press the flour mixture onto the chicken with your hands.

  • Step 6

    Insert the crisper plate into the basket and the basket into the unit. Preheat the unit by selecting AIR FRY, setting the temperature to 400°F, and setting the time to 3 minutes.  Select START/STOP to begin.

  • Step 7

    Once the unit is preheated, spray the crisper plate and the basket with cooking oil. Place the drumettes in the air fryer. It is okay to stack them. Spray the drumettes with cooking oil, being sure to cover the bottom layer.

  • Step 8

    Select AIR FRY, set the temperature to 400°F, and set the time to 20 minutes. Select START/STOP to begin.

  • Step 9

    After 5 minutes, remove the basket and shake it to ensure all pieces cook through. Reinsert the basket to resume cooking. Remove and shake the basket every 5 minutes, twice more, until a food thermometer inserted into the drumettes registers 165°F.

  • Step 10

    When the cooking is complete, let the chicken cool for 5 minutes.

  • Step 11

    While the chicken cooks and cools, make the salsa. In a small bowl, combine the mango, cilantro, red onion, garlic, and lime juice. Mix well until fully combined. Serve with the wings.
