Dairy-Free Sweet Potato & Marshmallow Ice Cream
This recipe is inspired by my favorite Thanksgiving dish – Sweet Potato Casserole. I wanted to reinvent a nostalgic dish by showcasing it in a new form… ice cream! And because the Ninja CREAMi Deluxe lets you fully customize your base, I decided to make this ice cream completely dairy free and low in added sugar. This ice cream is perfectly sweet and tastes like fall in the best way possible.
Prep Tip: The recipe calls for sweet potato puree. However, if you have fresh sweet potatoes, you can make the puree from scratch. You can do this in the microwave by poking a few holes in the top of the sweet potato with a fork and microwaving on high for about 10 minutes or until soft. Or, you can bake the sweet potato at 425F for 45 minutes on a baking sheet. Let potatoes cool and use the flesh inside of the potato in place of canned puree.
Swap Tip: There are a few swaps you could make with this recipe. First is the sweetener. You can substitute maple syrup, brown sugar, date syrup, etc. The same goes for the coconut milk and cream. You can use also use oat milk or even go for real milk if that’s your preference.

Step-by-step instruction without your screen going to sleep
- 1 cup sweet potato puree
- 1 ripe banana
- ½ cup sugar-free brown sugar
- 2 teaspoons vanilla extract
- 2 teaspoons pumpkin pie spice
- 1 cup unsweetened coconut cream (just the cream off the top of the can)
- 1 ½ cups unsweetened coconut milk cream
- 12 large marshmallows

Step 1
In a medium bowl, add sweet potato puree and banana and mash with a fork until evenly combined. Add the brown sugar, vanilla extract, pumpkin pie spice, and coconut cream and mix until combined.

Pour base into an empty CREAMi™ Deluxe Pint. Place storage lid on pint and freeze for 24 hours.

Step 3
Remove pint from freezer and remove lid from pint. Place pint in outer bowl, install Creamerizer™ Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

Select FULL, then use the dial to select LITE ICE CREAM.

While ice cream is processing, set oven to BROIL and line a baking tray with aluminum foil. Place the marshmallows on the tray and broil for 1 minute (or until the tops brown) then flip and broil for another 30 seconds. Keep a close eye on the marshmallows because they can burn very quickly.

When processing is complete, remove ice cream from Deluxe Pint. Top with roasted marshmallows and serve immediately.
