Cuban Roast Pork With Fried Plantains

Mojo Sauce

  • 1 bulb garlic (about 12 cloves), peeled, crushed
  • Zest and juice of 4 large navel oranges (1 cup juice)
  • 1/2 cup distilled white vinegar
  • 1/4 cup extra virgin olive oil
  • 1/4 cup fresh oregano leaves (from about 5 sprigs)
  • 1 1/2 tablespoons ground cumin
  • 2 teaspoons kosher salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper

Pork

  • 3 tablespoons avocado oil (or other neutral oil, such as canola)
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons smoked paprika
  • 1 tablespoon kosher salt, plus more for seasoning
  • 1 teaspoon freshly ground black pepper
  • 1 boneless pork shoulder (3 1/2–4 pounds), cut in 4 pieces
  • 1 large yellow onion, peeled, thinly sliced
  • 1 bay leaf
  • 1/4 cup fresh mint leaves, finely chopped
  • 1/4 cup fresh oregano leaves (from about 5 sprigs)

Fried Plantains

  • 1 cup water
  • 2 very ripe plantains (peels should be black), sliced in 1/2-inch pieces

  • Step 1

    Place all Mojo Sauce ingredients in a blender. Blend until smooth; set aside. 

  • Step 2

    Select SEAR/SAUTÉ and set to HIGH. Select START/STOP to begin. Add avocado oil and allow to preheat for 5 minutes. 

  • Step 3

    While oil is heating, stir together 2 teaspoons cumin, smoked paprika, salt, and pepper in a small bowl. Rub mixture onto pork. 

  • Step 4

    Once unit is preheated, place seasoned pork in the pot. Sear each side for about 5 minutes, until browned. Remove from pot and place onto a clean plate. 

  • Step 5

    Add onion to pot and cook about 5 minutes, or until softened and translucent. 

  • Step 6

    Return pork to the pot and add bay leaf and 1 cup Mojo Sauce. 

  • Step 7

    Assemble pressure lid, making sure the pressure release valve is in the SEAL position. Select PRESSURE and set to HIGH. Set time to 1 hour. Select START/STOP to begin. 

  • Step 8

    When pressure cooking is complete, allow pressure to naturally release for 15 minutes. After 15 minutes, quick release any remaining pressure by moving the pressure release valve to the VENT position. Carefully remove lid when unit has finished releasing pressure. 

  • Step 9

    Remove bay leaf and discard. Transfer pork to a large bowl and allow to cool slightly, then break into bite-size chunks.

    Use a ladle to skim the fat from the liquid in the pot. 

  • Step 11

    Add 2/3 cup Mojo Sauce, mint leaves, and oregano leaves to the large bowl of pork. Stir to combine, then cover to keep warm. 

  • Step 12

    To prepare the plantains, pour water into the pot. Place the reversible rack in the pot, making sure rack is in the lower position. Spray rack with cooking spray. Place plantain slices on top of rack. 

  • Step 13

    Assemble pressure lid, making sure the pressure release valve is in the VENT position. Select STEAM and set time to 9 minutes. Select START/STOP to begin. 

  • Step 14

    When steaming is complete, carefully remove the lid. Spray plantains with cooking spray and sprinkle with salt. Close the crisping lid. Select BROIL and set time to 8 minutes. Select START/STOP to begin. 

  • Step 15

    After 4 minutes, open lid and flip plantains. Close lid to resume cooking. After 6 minutes, check for doneness. 

  • Step 16

    When cooking is complete, serve plantains with pulled pork.
