Chipotle Pork Loin with Crispy Rice & Roasted Vegetable Salsa

LEVEL 1 (BOTTOM OF POT)

  • 1 box (8 ounces) Spanish-style rice, plus ingredients called for on rice box directions

LEVEL 2 (BOTTOM LAYER OF RACK)

  • 2 pounds pork loin
  • 3 tablespoons canola oil, divided
  • 3 tablespoons chipotle seasoning blend
  • 2 poblano peppers
  • 3 Roma tomatoes
  • 3 small tomatillos, peeled
  • 1 jalapeno
  • 1 medium yellow onion, peeled, quartered
  • 4 cloves garlic, peeled
  • Kosher salt, as desired
  • Ground black pepper, as desired
  • 3 tablespoon fresh lime juice, set aside
  • 1 tablespoon fresh cilantro, set aside
  • 1 tablespoon extra-virgin olive oil, set aside

  • Step 1

    Place Level 1 ingredients and the ingredients called for on rice box directions in the pot and stir until combined.

  • Step 2

    Rub the pork loins with 1 tablespoon canola oil and chipotle seasoning. In a large bowl, add the poblanos, tomatoes, tomatillos, jalapeno, onion, and garlic and toss with the remaining canola oil, salt, and pepper until evenly combined.

  • Step 3

    Place the bottom layer of the Deluxe Reversible Rack in the lower position, then place in the pot. Place the pork loins in the center of the rack and surround with the seasoned vegetable mixture.

  • Step 4

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 350°F, and set time to 30 minutes. Press START/STOP to begin cooking (PrE will display for approx. 15 minutes as the unit steams, then the timer will start counting down).

  • Step 5

    When cooking is complete, carefully remove the vegetables from the rack, then remove the pork and set aside to rest. Stir the rice.

  • Step 6

    While the pork is resting, make the salsa. Remove the stems from the peppers, then add to a food processor along with the remaining vegetables, lime juice, cilantro, and olive oil. Pulse with the vent open until smooth.

  • Step 7

    Slice the pork and serve warm with salsa and crispy rice.
