Crispy Orange Seitan with Broccoli & Rice

LEVEL 1 (BOTTOM OF POT)

  • 1 cup white rice
  • 1 3/4 cup water
  • 1 tablespoon vegan butter

LEVEL 2 (BOTTOM LAYER OF RACK)

  • 1 crown broccoli, cut in 2-inch (5cm) florets
  • 1 tablespoon soy sauce
  • 1/2 teaspoon white pepper

LEVEL 3 (TOP LAYER OF RACK)

  • 8 ounces seitan strips or pieces
  • 1/4 cup plant-based milk
  • 3 tablespoons corn starch, divided
  • 1 tablespoon cornmeal
  • 1 tablespoon sesame seeds
  • 1 teaspoon sesame oil

FOR THE SAUCE

  • 3/4 cup orange juice
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame seeds
  • 1 teaspoon ground ginger
  • 2 cloves garlic, minced
  • 1 teaspoon Sambal Oelek (or other hot sauce/paste)
  • 2 tablespoons corn starch
  • 3 tablespoons warm water

Utensils

  • Step 1

    Place all Level 1 ingredients in the pot and stir until combined.

  • Step 2

    Place all Level 2 ingredients in a medium bowl and toss until combined. Place the bottom layer of the Deluxe Reversible Rack in the lower position and cover with aluminum foil, then place the rack in the pot. Place the broccoli florets on the rack.

  • Step 3

    In a small bowl, combine the plant-based milk, 1 tablespoon corn starch, cornmeal, 1 tablespoon sesame seeds, and sesame oil. Add the seitan and combine until evenly coated.

  • Step 4

    Cover the Deluxe Layer with foil, then slide the Deluxe Layer through the lower layer’s handles. Place the seitan on the Deluxe Layer.

  • Step 5

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 390°F, and set time to 15 minutes. Press START/STOP to begin cooking (PrE will display for approx. 6 minutes as the unit steams, then the timer will start counting down).

  • Step 6

    While the food cooks, prepare the sauce. Place a medium saucepan over medium heat and add the orange juice, 1/4 cup soy sauce, rice vinegar, brown sugar, 1 tablespoon sesame seeds, ginger, garlic, and Sambal Oelek. Bring to a simmer.

  • Step 7

    While the sauce simmers, combine the remaining 2 tablespoons corn starch and 3 tablespoons warm water in a small bowl. Slowly whisk the corn starch and water into the saucepan. Reduce heat to low and cover until cooking is complete.

  • Step 8

    When cooking is complete, remove the racks. Transfer the seitan to the sauce, increase heat to medium, and stir until evenly coated. Allow the seitan to cook in the sauce for about 3 minutes.

    Serve the seitan over rice with broccoli and garnish with scallions.
