Chicken Zucchini Pasta

This is a delicious and easy dish to prep for lunch or dinner!

TIP: You can cook the chicken a day or two ahead of time and reheat with zucchini noodles when ready to serve.

Cooking mode

  • 1/2 cup water
  • 1 pound chicken breast, diced
  • fresh ground black pepper
  • ½ tablespoon extra-virgin olive oil
  • 4 medium zucchini, spiralized
  • 1/4 cup cherry tomatoes, halved
  • 1/2 cup pesto
  • 4 tablespoons grated parmesan cheese, for serving

  • Step 1

    Place the water and chicken in the pot. Season the chicken with salt and pepper. Assemble the pressure lid, making sure pressure release valve is in the SEAL position.  

  • Step 2

    Select PRESSURE and set HIGH. Set time to 8 minutes. Select START/STOP to begin.  

  • Step 3

    When pressure cooking is complete, quick release the pressure by moving the pressure the lid when the unit has finished releasing pressure.  

  • Step 4

    Transfer the chicken to a bowl. Drain any excess water from the pot and wipe it clean.  

  • Step 5

    Select SEAR/SAUTE and add the olive oil. Once hot, add the zucchini. Cook for 2 or 3 minutes, then add the tomatoes and pesto. Toss to combine and season with salt and pepper. 

  • Step 6

    When cooking is complete, place the zucchini pasta in bowls and top with the parmesan cheese.
