Who doesn’t want a dinner that is so easy it basically prepares itself? That’s exactly how it felt cooking in my Ninja Speedi. This fresh and healthy recipe includes juicy and flavorful chicken breast.
Tip: Prep the chicken ahead of time by seasoning then refrigerating until ready to cook. You can use spinach or chopped asparagus instead of peas.
Tip: If you don’t have chicken seasoning, combine 1 teaspoon paprika, 1 teaspoon oregano, ½ teaspoon pepper, and 1 teaspoon garlic powder to make a homemade chicken seasoning
Tip: If you base needs more time, switch to SEAR/SAUTE and continue to cook with the lid open until liquid is absorbed.

LEVEL 1 (BOTTOM OF POT)
- 1 cup brown rice, rinsed
- 1 1/2 cups chicken broth
- 1 cup frozen peas
LEVEL 2 (CRISPER TRAY)
- 2 boneless-skinless chicken breasts (6-8 ounces each)
- 1 tablespoon chicken seasoning
- 2 tablespoons olive oil
OPTIONAL TOPPINGS
- Tzatziki sauce, as desired
- Fresh chopped parsley, as desired

Step 1
Place all Level 1 ingredients in the pot and stir to combine.

Pull out the legs on the Crisper Tray, then place the tray in the elevated position in the pot.

Add all level two ingredients to a large bowl. Using hands or tongs, ensure the oil and seasoning evenly coats the chicken. Allow chicken to marinate for 10 minutes.

Place the chicken on top of the Crisper Tray.

Close the lid and flip the SmartSwitch™ to RAPID COOKER.

Select SPEEDI MEALS, set temperature to 390°F, and set time to 14 minutes. Press START/STOP to begin cooking (the unit will steam for approximately 15 minutes before crisping).

When cooking is complete, transfer the chicken to a cutting board and slice. Then use silicone-tipped tongs to grab the center handle and remove the tray from the unit. Stir the rice mixture and serve chicken, tzatziki, and parsley as desired.
