Unwrap and unfold the puff pastry on a slightly flowered cutting board. Using a rolling pin, roll it very lightly, just to press the folds together. Transfer it to the sheet pan.

  • Step 4

Roll about 1/2 inch of the pastry edges up to form a Ridge around the parameter. Crimp the corners together so you have a solid rim around the pastry to hold in the liquid as that are cooks. Brush the bottom of the pastry with two tablespoons of caramel sauce. (If the sauce has cooled, it may be very stiff. You can microwave it for a few seconds or set the jar in a bowl of very hot water for a few minutes to make it easier to brush).

  • Step 5

Remove the pear halves from the water and blot them dry with paper towels. Place one of the halves on the board cut side down and cut 1/4-inch-thick slices radially (think of cutting really thin wedges, rather than slicing straight up and down). Repeat with the remaining halves. Arrange the pear slices over the pastry. The target can be served warm or at room temperature. If there is a lot of liquid floating around the pears you can bloit off with paper towels, which will keep the crust crispier and won’t blemish the flavor.
