Step-by-step instruction without your screen going to sleep
- 1 juice of lemon
- 4 cups Water
- 3 medium or 2 large ripe or almost ripe pears (preferably bosc or Anjou)
- 1 sheet (1/2 package) frozen puff pastry, thawed
- all-purpose flour, for dusting
- 4 tablespoons caramel sauce, divided

Step 1
In a large bowl, mix a lemon juice with the one quart of water.

Peel the pears and remove the stems. Cut them in half through the stem end. Use a melon baller to remove the seeds remove any tough fiber between the stem end and the sensor. As you work, placed the pear halves in the lemon water.

Unwrap and unfold the puff pastry on a slightly flowered cutting board. Using a rolling pin, roll it very lightly, just to press the folds together. Transfer it to the sheet pan.

Roll about 1/2 inch of the pastry edges up to form a Ridge around the parameter. Crimp the corners together so you have a solid rim around the pastry to hold in the liquid as that are cooks. Brush the bottom of the pastry with two tablespoons of caramel sauce. (If the sauce has cooled, it may be very stiff. You can microwave it for a few seconds or set the jar in a bowl of very hot water for a few minutes to make it easier to brush).

Remove the pear halves from the water and blot them dry with paper towels. Place one of the halves on the board cut side down and cut 1/4-inch-thick slices radially (think of cutting really thin wedges, rather than slicing straight up and down). Repeat with the remaining halves. Arrange the pear slices over the pastry. You can get as fancy as you like, three rows of slices fill the tart. Drizzle the remaining 2 tablespoons of, sauce over the pears.

Select BAKE, set temperature to 350 F, and set time to 25 minutes. Select START/PAUSE to begin preheating.

Once the unit has preheated, slide the pan into the oven.

After 15 minutes, check the tart, rotating the pan if the crust is not Browning evenly. Continue cooking.

When cooking is complete, the pastry will be Golden Brown, The pears soft, and the caramel bubbling. Remove the pan from the oven and let that are cool for about 10 minutes. The target can be served warm or at room temperature. If there is a lot of liquid floating around the pears you can blot it off with paper towels, which will keep the crust crispier and won’t blemish the flavor.
