Cooking mode

  • 3 bacon strips
  • 4 large egg yolks
  • ¼ cup granulated sugar
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 2 tablespoons cream cheese
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract

Utensils

  • Rubber Spatula

  • Step 1

    Add bacon to a medium skillet over medium-low heat. Cook for 6 to 8 minutes, or until crispy on both sides. Remove bacon from pan and set aside to cool, about 5 minutes. Reserve one tablespoon of rendered bacon fat from pan.

  • Step 2

    When bacon is cooled, chop fine, then transfer to an airtight container and refrigerate for later use.

  • Step 3

    Place egg yolks and sugar in a small saucepan and whisk until fully combined and sugar is dissolved.

  • Step 4

    Add heavy cream, milk, cream cheese, bourbon, and vanilla to saucepan and stir to combine.

  • Step 5

    Place saucepan on stove over medium heat, stirring constantly with a whisk or rubber spatula. Cook until temperature reaches 165°F-175°F on an instant-read thermometer.

  • Step 6

    Remove base from heat, whisk in reserved bacon fat, and pour through a fine-mesh strainer into an empty CREAMi Pint. Place pint into an ice bath. Once cooled, place storage lid on pint and freeze for 24 hours.

  • Step 7

    Remove pint from freezer and remove lid from pint. Place pint in outer bowl, install Creamerizer™ Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.

  • Step 8

    Select GELATO.

  • Step 9

    With a spoon, create a 1 ½-inch wide hole that reaches the bottom of the pint. Add chopped bacon to the hole and process again using the MIX-IN program.

  • Step 10

    When processing is complete, remove gelato from pint and serve immediately.
