Blueberry Coffee Cake with Crumble Topping
This coffee cake is easy and quick to make. A soft and tender cake filled with sweet blueberries, topped with a crisp and buttery crumble. Make this for a weekend brunch with friends, or snack on it throughout the week as a grab and go breakfast.

Cinnamon Sugar Topping
- 1/2 teaspoon cinnamon
- 1/4 cup brown sugar
Crumble Topping
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/3 cup cold butter, cubed
- 1/2 teaspoon cinnamon
Batter
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1/2 cup sour cream
- 1/4 cup whole milk
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 4 tablespoons butter, melted
- 1 cup blueberries

Step 1
Preheat the oven to 350°F. Spray a 9-inch round baking pan with cooking spray and set aside.

In a small bowl, combine the cinnamon sugar topping ingredients. Set aside.

In a medium bowl, add all crumble topping ingredients. With a fork, mix the ingredients together, combining the butter into the dry ingredients until a crumbly dough mixture is formed. Set aside.

Assemble the hand mixer attachment on the power base, then install the beaters.

To prepare the cake batter, add the dry ingredients: flour, sugar, baking powder, and salt to a large bowl. Press power to mix on speed 1 until evenly combined, about 10 seconds.

Next, create a well in the center of the dry ingredients and add sour cream, milk, egg, vanilla extract, and butter. Press power to begin mixing on speed 1 and then gradually increase to speed 4. Mix until the batter is smooth, about 2 minutes.

Using a rubber spatula, gently fold blueberries into the batter. Transfer the batter to the prepared baking pan. Top with the cinnamon sugar topping, followed by the crumble topping.

Place the cake in the oven and bake for 40 to 45 minutes or until a toothpick will come out clean after being inserted in the center.

Remove cake from the oven and allow to cool completely before serving. Once cooled, dust with confectioner’s sugar, then slice and serve.
