Skirt Steak with Sweet Plantains and Carrots

LEVEL 1 (BOTTOM OF POT)
- 1 cup water for steaming
LEVEL 2 (BOTTOM LAYER OF RACK)
- 3 ripe sweet plantain, cut 1 inch thick slices
- 5 medium carrots sliced diagonally
- 3 tablespoon Canola oil
- 1/2 tablespoon fresh dill
- ground pepper as desired
- Kosher salt, as desired
LEVEL 3 (TOP LAYER OF RACK)
- 2 pounds 2 pounds skirt steak
- 1 tablespoon cumin
- 1/2 tablespoon coriander
- Kosher salt, as desired
- ground black pepper, as desired
Toppings (optional)

Utensils
- Large Bowl
- Deluxe Reversible Rack
- Aluminum Foil

Step 1
Add 1 cup of water into the pot.

Step 2
Place all level 2 ingredients in a large bowl and toss until evenly combined.

Step 3
Place the bottom layer of the Deluxe Reversible Rack in the lower position. Cover with aluminum foil, then place the rack in the pot. Place the vegetables on the rack.

Step 4
Slide the Deluxe Layer through the lower layer’s handles. Evenly coat the steaks on all sides with cumin, coriander, salt, and pepper. Place the steak on the Deluxe Layer.

Step 5
Close lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 425°F, and set time to 10 minutes. Press START/STOP to begin cooking (PrE will display for approx. 16 minutes as the steams, then the timer will start counting down).

Step 6
When cooking is complete, remove the rack layers. Let the steak sit for 5 minutes before cutting, then serve with vegetable mixture.
