Cajun Fish and Andouille Sausage Dirty Rice

I love Cajun food, but I have never really thought of its heritage. In researching it, I found out that a lot of Cajun people came from Nova Scotia, just like my family. This could be the reason I am so partial to the cuisine, but I think it’s the spice. Cajun food tends to have a kick, and this recipe is no different. If spicy food isn’t your thing, feel free to season with a spice blend of your choice.

Variation Tip: Not a fan of tilapia? Swap it out for a fresh piece of flounder.

Cooking mode

  • 1 tablespoon canola oil
  • 2 fully cooked andouille sausages, diced
  • 1 bell pepper, seeded and diced
  • 1 celery stalk, diced
  • 1/2 small white onion, diced
  • 1 garlic clove, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon plus 1 teaspoon Cajun spice rub, divided
  • 3 (6-ounce) fresh tilapia fillets
  • 2 cups white rice
  • 4 cups beef stock

  • Step 1

    Close the lid and move the slider to AIR FRY/STOVETOP. Select SEAR/SAUTÉ and set the temperature to HI-5. Open the lid and select START/STOP to begin preheating. Allow the unit to preheat for 5 minutes.

  • Step 2

    When the unit has preheated, put the oil, sausage, bell pepper, celery, and onion in the pot and sauté, stirring often, until the onion is tender, 5 to 6 minutes.

  • Step 3

    Add the garlic, butter, and 1 teaspoon of Cajun spice rub to the pot, and cook for 30 seconds, stirring constantly with a rubber spatula to incorporate.

  • Step 4

    While the vegetables and sausage are cooking, rub both sides of the tilapia fillets with the remaining 1 tablespoon of Cajun spice rub.

  • Step 5

    Add the rice and beef stock to the pot and stir to combine.

  • Step 6

    Place the bottom layer of the Deluxe Reversible Rack in the higher position, then place the rack in the pot over the rice mixture. Place the fillets on the rack.

  • Step 7

    Close the lid and move the slider to STEAMCRISP. Select STEAM & CRISP, set the temperature to 450°F, and set the time to 5 minutes. Press START/STOP to begin cooking (PrE will display for about 20 minutes as the unit steams, then the timer will start counting down).

  • Step 8

    When cooking is complete, carefully remove the rack with the fish. Stir the rice and serve with the fish.
