I could have named this recipe Grilled Lamb Flavor Bombs because that is truly what they are. The tang of the feta mixed with herbs that tame the gaminess of the lamb and the fresh, crunchy vegetables on top is something out of a gourmet food magazine. With the flavor from charred edges created by the Foodi™ Grill, you’ve got a meaty flavor bomb in your mouth.

SUBSTITUTION TIP: Make this recipe nut-freeby using crushed pork rinds in place of the almond flour. This recipe not only becomes nut-free but also even lower in carbs and higher in fat.

  • 1 1/4 pounds ground lamb
  • 1 large egg, beaten
  • 1/4 cup almond flour
  • 1 tablespoon avocado oil
  • 4 garlic cloves, minced
  • 2 1/2 teaspoons sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 ounces crumbled feta cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 cup thinly sliced cucumber
  • 1/4 cup thinly sliced red onion

  • Step 1

    Insert the Grill Grate and close the hood. Select GRILL, set the temperature to HIGH, and set the time to 8 minutes. Select START/STOP to begin preheating.

  • Step 2

    In a large bowl, combine the ground lamb, egg, almond flour, oil, garlic, salt, and pepper. Using your hands, gently mix until combined. Form the meat mixture into 8 equal balls, then flatten them into 1/4-inch-thick patties.

  • Step 3

    In a small bowl, use a fork to mix the feta, basil, and oregano. Place equal amounts of the cheese mixture (about 1 ounce) in the center of 4 patties. Place a second plain patty on top of a cheese patty and press the meat around the edges to seal the cheese inside. Roll each enclosed patty into a ball, then flatten again into1-inch-thick patties.

  • Step 4

    When the unit beeps to signal it is preheated, place the patties directly onto the Grill Grate. Close the hood and cook for 4 minutes. After 4 minutes, flip the patties, close the hood, and cook for an additional 4 minutes.

    Remove the lamb burgers from the grill. Serve each burger topped with cucumber and red onion.
