LEVEL 1 (BOTTOM OF POT)

  • 1/2 cup chicken stock
  • 1/4 cup whole grain mustard
  • 1/2 head green cabbage, chopped in 1/2-inch pieces
  • 1 medium yellow onion, peeled, julienned
  • 2 firm apples of choice, peeled, cored, sliced
  • 1 bay leaf
  • 2 teaspoons caraway seeds
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup unsalted butter

LEVEL 2 (TOP LAYER OF RACK)

  • 1/4 cup kosher salt
  • 1/4 cup apple cider vinegar
  • 1/4 cup light brown sugar
  • 1 tablespoon peppercorns, crushed slightly
  • 2 teaspoons granulated garlic
  • 3 sprigs rosemary
  • 2 cups water
  • 4 cups ice
  • 4 (8 ounces each) pork chops, 2 inches thick
  • 1/4 tablespoon unsalted butter
  • 1 tablespoon smoked paprika

TOPPING (optional)

  • 2 tablespoons scallions, chopped

  • Step 1

    To prepare the brine, close lid and move slider to AIR FRY/STOVETOP. Select SEAR/SAUTE and set to 4. Open lid and select START/STOP. Add the salt, apple cider vinegar, brown sugar, peppercorns, garlic, rosemary, and water. Bring to a boil, then select START/STOP to stop the cooking. Add the ice and stir until melted.

  • Step 2

    Place the brine and pork chops in a large, resealable plastic bag. Place the bag in the refrigerator for at least 6 hours and up to 24 hours.

  • Step 3

    When the pork chops are marinated, remove from the brine and pat dry.

  • Step 4

    In a small bowl, add the butter and paprika. Mix until well combined, then evenly coat all sides of the pork chops.

  • Step 5

    Place all Level 1 ingredients in the pot.

  • Step 6

    Place the bottom layer of the Deluxe Reversible Rack in the higher position, then place it in the pot. Place the pork chops on the rack.

  • Step 7

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature at 400°F, and set time for 15 minutes. Press START/STOP to begin cooking (PrE will display for approx. 15 minutes as the unit steams, then the timer will start counting down).

  • Step 8

    When cooking is complete, remove the rack. The internal temperature of the pork should be 135°F–145°F.

  • Step 9

    Stir the cabbage and apples. Serve with the pork chops and top with scallions.
