Vegetarian Ramen Bowls

Forget instant ramen, this recipe is nearly as easy and so much tastier! This is a great weeknight vegetarian meal, and it is adaptable to what you have on hand. Feel free to swap in any of your favorite veggies!

LEVEL 1 (BOTTOM OF POT)

  • 6 cups water
  • 3 packages dried ramen noodles, soy sauce flavor

LEVEL 2 (BOTTOM LAYER OF RACK)

  • 2 cups chopped Napa cabbage
  • 1 red bell pepper, deseeded, thinly sliced
  • 1 package (5 ounces) shiitake mushrooms, sliced
  • 1 cup sugar snap peas
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, peeled, minced
  • 1 tablespoon olive oil
  • Kosher salt, as desired
  • Ground black pepper, as desired

LEVEL 3 (TOP LAYER OF RACK)

  • 1 block (16 ounces) extra-firm tofu, drained, pressed dry, cut horizontally into slices 1/2-inch (1.25cm) thick
  • 1 cup sesame ginger marinade

TOPPING (optional)

  • 1/4 cup scallions, sliced for garnish

  • Step 1

    Place the tofu and sesame ginger marinade into a large, resealable, plastic bag. Rub the outside of the bag until the tofu is evenly coated with the marinade. Place in the refrigerator to marinate for 1 to 3 hours. Take it out of the refrigerator 15 minutes before cooking.

  • Step 2

    Place water and soup seasoning packets into the pot and stir until combined. Add the noodles and continue to stir until combined.

  • Step 3

    Place all Level 2 ingredients in a medium bowl and toss until combined.

  • Step 4

    Place a 15-inch sheet of aluminum foil on a flat surface. Add the vegetable mixture to the center and fold the edges in to create a sealed packet. Place the foil packet on the bottom layer of the Deluxe Reversible Rack in the lower position, then place the rack in the pot over the noodles.

  • Step 5

    Slide the Deluxe Layer through the lower layer’s handles. Place the marinated tofu on the top layer of the rack.

  • Step 6

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 450°F, and set time to 5 minutes. Press START/STOP to begin cooking (PrE will display for approx. 12 minutes as the unit steams, then the timer will start counting down).

  • Step 7

    When cooking is complete, remove the rack with the vegetables and tofu, then stir the noodles. Serve the noodles with vegetables, tofu, and scallions.
