Pork Udon Noodle Bowls

LEVEL 1 (BOTTOM OF POT)

  • 2 cups beef stock
  • 2 tablespoons soy sauce
  • 2 tablespoons sriracha sauce
  • 2 tablespoons hoisin sauce
  • 1 package (9-ounce) frozen or dry Udon noodles

LEVEL 2 (MIDDLE LAYER OF RACK)

  • 1 cup broccoli, 2-inch (5cm) florets
  • 1/2 cup baby bella mushrooms, sliced
  • 1/2 red bell pepper, thinly sliced
  • 1 tablespoon canola oil
  • Kosher salt, as desired
  • Ground black pepper, as desired

LEVEL 3 (TOP LAYER OF RACK)

  • 1 pound pork tenderloin, sliced into circles ½-inch (1.25cm) thick
  • 1 tablespoon brown sugar
  • 1/4 cup sesame oil
  • 1/4 cup soy sauce
  • 3 tablespoons chopped scallions, divided

  • Step 1

    Place pork tenderloin, brown sugar, sesame oil, 1/4 cup soy sauce, and 1 tablespoon scallions into a large, resealable, plastic bag. Massage the outside of the bag to work the marinade over all parts of the pork, then place the bag in the refrigerator for 3 to 5 hours to marinate. Take it out of the refrigerator 15 minutes before cooking.

  • Step 2

    Place the beef stock, 2 tablespoons soy sauce, sriracha sauce, and hoisin sauce in the pot and stir until combined. Add the noodles and continue to stir until combined.

  • Step 3

    Place all Level 2 ingredients in a medium bowl and toss until combined. Place the bottom layer of the Deluxe Reversible Rack in the lower position and cover it with aluminum foil, then place the rack in the pot. Place the broccoli, mushrooms, and peppers on top of the rack.

  • Step 4

    Slide the Deluxe Layer through the lower layer’s handles. Place the marinated pork on the Deluxe Layer.

  • Step 5

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 450°F, and set time to 8 minutes. Press START/STOP to begin cooking (PrE will display for approx. 12 minutes as the unit steams, then the timer will start counting down).

  • Step 6

    When cooking is complete, carefully remove the entire rack, then stir the noodles. Serve with vegetables, pork, and scallions.
