  • 929 grams high-protein bread flour
  • 511 grams 511grams water
  • 18.5 grams fine sea salt
  • 4.6 grams barley malt syrup or powder
  • 3.7 grams instant yeast
  • Semolina flour, as needed
  • Everything bagel seasoning, as needed
  • Cream cheese, to serve (optional)
  • Step 1

    1. In a large bowl or stand mixer fitted with the dough hook, combine the bread flour, water, salt, barley malt, and instant yeast. Mix on low speed until a shaggy dough forms.

    2. Using the stand mixer, or by hand on a floured worksurface, knead the dough for 8-10 minutes, until dough tightens and is smooth and slightly tacky.

    3.Transfer dough to a large bowl. Cover with plastic wrap and allow to rise for about 1 hour.

    4. After dough rises, divide into 9 equal pieces (about 160 grams each). Shape into tight balls, then poke a hole through the center of each ball using finger. Gently stretch dough to form bagel rings about 2 inches across. Transfer bagels to a sheet tray or plate.

    5. Spray a piece of plastic wrap with non-stick cooking spray, then cover bagels to prevent sticking. Transfer covered bagels to fridge for 12-24 hours.

    6. When ready to cook bagels, Place pizza stone on top of grill grates. Follow ignition instructions on unit, then select GRILL/PIZZA function and use the TEMPERATURE CONTROL dial to set the temperature to 450°F. Close the lid to begin preheating. (The unit will flash the current temperature and set temperature until preheated.)

    7. When unit is preheated, keep lid closed and allow pizza stone to preheat for an additional 10 minutes.

    8. Meanwhile, fill a large pot with water and place over medium-high heat to bring ta boil.

    9. Carefully place bagels in the boiling water. Cook for 30 seconds to 2 minutes per side, depending on desired doneness. The longer the bagels boil, the more dense the crust will be.

    10. Transfer bagels to a wire rack to dry, then sprinkle the tops with everything bagel seasoning.

    11. When pizza stone is preheated, transfer bagels directly to pizza stone. Close lid and cook for 15 minutes, using pizza peel or spatula to rotate bagels every 3-4 minutes.

    12. When cooking is complete, remove bagels with peel or spatula and allow to cool on wire rack for 10-15 minutes before slicing and servings.
