TIP: Make sure to soak the pre-packaged corned beef brisket in cold water for 2 hours. This will remove the excess salt from the meat.

Cooking mode

  • 2 pound corned beef brisket
  • 2 tablespoons whole grain mustard
  • 2 tablespoons favorite beef seasoning
  • 1 package premade slider buns, 12 count
  • 3 tablespoons butter, melted
  • 2 tablespoons parsley, finely chopped
  • 2 cups shredded white cheddar cheese
  • 6 slices Swiss cheese
  • 1 cup sauerkraut

Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons chili sauce
  • 2 tablespoons India relish
  • 2 tablespoons finely diced red onion
  • 1 tablespoon horseradish
  • 1 teaspoon hot sauce (or more if desired)
  • 1/2 teaspoon smoked paprika

  • Step 1

    To install the grill grate, position it flat on top of the heating element and gently press down until it sits into place.

  • Step 2

    Soak pre packaged corned beef brisket in cold water in the refrigerator for two hours to remove some of the excessive salt from packaging. Then, blot dry with a paper towel and lightly coat the meat with whole grain mustard. Season all sides with desired seasoning.

  • Step 3

    Place the meat on the grill, insert temperature probe into the thickest portion of the meat, and close the hood.

  • Step 4

    While holding the smoke box lid open, use the pellet scoop to pour pellets into the smoke box until filled to the top. Then close the smoke box lid.

  • Step 5

    Turn dial to select SMOKER, set temperature to 250°F. Press MANUAL and set probe temperature to 203°F. Select START/STOP to begin cooking (preheating is not needed). Exact cook time will vary based on the size of the roast, but cooking will take approximately 2.5 hours.

  • Step 6

    When cooking is complete, turn the dial to OFF. Remove beef and temperature probe from the grill and let it rest for about 30 minutes before thinly slicing or chopping the beef.

  • Step 7

    While meat is resting, whisk together all ingredients for dipping sauce in a small mixing bowl, and set aside. Clean grill surface, turn dial to BAKE and set temperature to 275°F. Press START/STOP and allow grill to preheat.

  • Step 8

    While grill is preheating, place bottom portion of buns in a baking dish. Cover with shredded cheese, sliced or chopped beef, sauerkraut, sliced cheese and top buns. Drizzle half the melted butter and on top buns.

  • Step 9

    When grill signals ADD FOOD, place the sliders in the grill and close hood. Allow to bake for 15-20 minutes until cheese has melted. Remove from grill, drizzle with remaining butter and parsley, serve with dipping sauce.
