Pecan Pie Bars

TIP: Boiling pecan mixture before pouring into crust helps the mixture cook more quickly and helps the bars set.

LEVEL 1 (BOTTOM OF POT)

  • 2 1/2 cups water, for steaming, divided
  • Nonstick cooking spray

LEVEL 2 (BOTTOM LAYER OF RACK) CRUST

  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 2 1/2 tablespoons coconut oil
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of Kosher salt

LEVEL 2 (BOTTOM LAYER OF RACK) FILLING

  • 1/2 cup melted coconut oil
  • 1/4 cup maple syrup
  • 2/3 cup coconut sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon dairy-free milk
  • 2 cups chopped pecans

Utensils

  • Deluxe Reversible Rack (bottom layer only)
  • Ninja® Multi-Purpose Pan or 8-inch round baking pan
  • Step 1

    Add 1/2 cup water to the pot. Spray the Multi-Purpose Pan with nonstick cooking spray.

  • Step 2

    To make crust, add the crust ingredients to a large bowl and mix until evenly combined. Transfer the mixture into the prepared pan, press into an even layer, and use a fork to poke the surface of the dough.

  • Step 3

    Place the pan on the bottom layer of the Deluxe Reversible Rack in the lower position, then place the rack in the pot.

  • Step 4

    Close the lid and move slider to STEAMCRISP. Select STEAM & BAKE, set temperature to 300°F, and set time to 15 minutes. Press START/STOP to begin cooking (PrE will display for approx. 10 minutes as the unit steams, then the timer will start counting down).

  • Step 5

    While the crust is baking, prepare the filling. Add the filling ingredients to a medium saucepan and bring to a boil over medium-high heat. Boil mixture for 2 minutes, whisking constantly, then remove from heat.

  • Step 6

    When cooking of the crust is complete, remove the rack and pan. Pour the pecan filling into the hot crust.

  • Step 7

    Add 2 cups water to the pot and place the rack and pan back in the pot.

  • Step 8

    Close the lid and keep slider on STEAMCRISP. Select STEAM & BAKE, set temperature to 290°, and set time to 20 minutes. Press START/STOP to begin cooking (PrE will display for approx. 15 minutes, then the timer will start counting down).

  • Step 9

    When cooking is complete, the filling will be set, and will only slightly jiggle when pan is shaken. Remove rack with pan and let cool for 1 hour.
