Breakfast in bed just got a whole lot more appealing! Each bite of these fluffy peanut butter pancakes will melt in your mouth, especially when you pair it with the decadent peanut butter syrup. Your kids will love them, but you may not want to share!

Tip: Turn these into PB&J pancakes by topping your flapjacks with a dollop of jam.

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 1/4 cups buttermilk
  • 1 large egg, lightly beaten
  • 1/4 cup creamy peanut butter
  • 2 tablespoons unsalted butter, melted
  • Vegetable oil, as necessary

Peanut Butter Syrup

  • 2 tablespoons creamy peanut butter
  • 1/4 cup maple syrup

  • Step 1

    In a large bowl, add flour, sugar, baking powder, baking soda, and salt and mix with a spoon to combine.

  • Step 2

    In a small bowl, add buttermilk, egg, peanut butter, and melted butter. Assemble the hand mixer attachment on the power base, then install the beaters. Press power to mix on speed 1 until evenly combined, about 30 seconds.

  • Step 3

    Pour liquid mixture over the flour mixture. Press power to mix on speed 1 then gradually increase to speed 4 until well combined, about 1 minute.

  • Step 4

    Heat a medium skillet over medium heat, with oil as necessary. Add 1/4 cup of batter to the skillet and cook flipping once, until cooked through, about 2 minutes per side. Repeat with the remaining batter, adding oil as necessary.

  • Step 5

    To prepare the peanut butter syrup, combine creamy peanut butter and maple syrup in a bowl. Stir until smooth.

    Serve pancakes topped with syrup.
