Peach Bellini Sorbet

- 480ml peach juice/nectar
- 240ml champagne or white sparkling wine
- 50g granulated sugar
- 2 cups peach juice/nectar
- 1 cup champagne or white sparkling wine
- 1/4 cup granulated sugar

In a medium saucepan, add peach juice/nectar and champagne and whisk to combine.
Place saucepan on stove over medium heat, bring to a boil, then reduce to a simmer and cook 10 minutes until reduced to 2 cups.
Add sugar and whisk until dissolved.
Remove base from heat and pour into an empty CREAMi™ Place pint into an ice bath. When cooled, place storage lid on pint and freeze for 24 hours.
Remove pint from freezer and remove lid from pint. Place pint in outer bowl, install CREAMi Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.
