Paneer Tikka Skewers

This is the ultimate vegetarian meal for Meatless Monday! Delicious and easy, serve these up with some steamed rice and you’re all set.

For the Skewers

  • ¼ cup plain full-fat yogurt
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • ¼ teaspoon ground turmeric
  • 1 teaspoon Kashmiri red chili powder
  • ½ teaspoon garam masala
  • 1 teaspoon kosher salt
  • ½ tablespoon dried fenugreek leaves
  • ½ teaspoon lemon juice
  • 8 ounces paneer, cut into 1-inch cubes
  • ½ medium red pepper, cut into 1-inch pieces
  • 1/2 medium green pepper, cut into 1-inch pieces
  • ½ medium red onion, outer 3-4 layers only, cut into 1-inch pieces
  • 5-6 each (6-inch) skewers (if wooden, soaked in water for 10 minutes)
  • ½ tablespoon avocado oil

Cilantro Mint Chutney

  • 2 cups cilantro, leaves and stems, chopped
  • 1 cup mint leaves
  • ½ cup unsweetened coconut, frozen or dry
  • 4 garlic cloves, peeled
  • 2 teaspoons cumin seeds
  • 4-8 small green chiles
  • Juice of 1 lemon
  • Kosher salt, as desired
  • Granulated sugar, as desired
  • ½ cup water

To Serve

  • 1 tablespoon cilantro, finely chopped, to garnish
  • ½ lemon, cut into wedges
  • ½ cup Cilantro Mint Chutney

  • Step 1

    In a medium bowl add the yogurt, ginger, garlic, turmeric, red chili powder, garam masala, and salt. Crush the dried fenugreek leaves in the palm of your hands and add them to the bowl. Add the lemon juice and stir to combine. 

  • Step 2

    Add the paneer, peppers, and onions to the marinade. Gently mix everything together, evenly coating the paneer and vegetables in the marinade. 

  • Step 3

    Cover the bowl and allow it to marinate for 30 minutes at room temperature or refrigerate for up to 24 hours. 

  • Step 4

    While the paneer and vegetables are marinating, prepare the chutney. Add all ingredients to a blender and blend until smooth, adding 1 to 2 tablespoons extra water as needed. Once blended to desired consistency, transfer to serving bowl.  

  • Step 5

    To install the grill grate, slide it into the front of the base so it hooks in, then press down on the back until it clicks into place. Close the hood. 

  • Step 6

    Select GRILL, set temperature to HI, and set time to 10 minutes, Press the dial to begin preheating (preheating will take approximately 10 minutes). 

  • Step 7

    Assemble the skewers in the following order until they are almost full: paneer, peppers, onions. 

  • Step 8

    When unit beeps to signify it has preheated, open hood and place the skewers on grill grate and lightly brush with oil. Gently press the skewers down to maximize grill marks. Leave the hood open while cooking.  

  • Step 9

    Grill for about 5 minutes per side or until the paneer has grill marks. Remove from grill and repeat with any remaining skewers. Serve with chopped cilantro, lemon wedges, and cilantro mint chutney.
