Mini Brownie Cakes
Move over, boxed brownies! I’m always for easy and simple recipes, and this is one of my favorites. These brownie cakes are crispy on the outside and ooey-gooey and fudgy on the inside. Having these set up in their own ramekins makes them easy to serve and ensures everyone gets a fair share. Don’t forget the vanilla ice cream, which complements these warm brownies perfectly.
HACK IT: You can microwave your butter to melt it instead of using the Foodi™ Grill during the preheat step. Either way, be sure that the melted butter cools slightly before adding it to the eggs. Otherwise you will end up with cooked egg pieces in your brownie mixture.

Cooking mode
Step-by-step instruction without your screen going to sleep
- 8 tablespoons (1 stick) unsalted butter, melted
- 2 large eggs
- 1/4 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/2 cup all-purpose flour

Step 1
Cut the butter into quarters and divide them between 4 (6-ounce) ramekins. Insert the Cooking Pot, place the ramekins in the pot, and close the hood. Select GRILL, set the temperature to LO, and set the time to 15 minutes. Select START/STOP to begin preheating. After 3 minutes of preheating (set a separate timer), use grill mitts to remove the ramekins and set aside. Close the hood to continue preheating.

While the unit is preheating, in a large bowl, whisk the eggs together, then add the cocoa powder, sugar, vanilla, and salt. Sift or gradually shake the flour into the bowl as you continue mixing. Then stir in the melted butter to form a smooth batter. Divide the batter evenly among 4 (6-ounce) ramekins, filling them no more than three-quarters full.

Step 3
When the unit beeps to signify it has preheated, place the ramekins in the Cooking Pot. Close the hood and cook for 15 minutes.

When cooking is complete, open the hood and remove the ramekins. The brownies are done when a toothpick inserted in the center comes out clean. (Cooking them for 15 minutes usually gives the brownies a crispy crust with a fudgy center. Add another 3 to 5 minutes if you wish to cook the center all the way through.)
