Step-by-step instruction without your screen going to sleep
- 300ml heavy cream
- 120ml IPA beer
- 90g granulated sugar
- 3 egg yolks
- 1 1/4 cup heavy cream
- 1/2 cup IPA beer
- 1/2 cup granulated sugar
- 3 egg yolks
Place the cream and beer in a medium saucepan over low heat, stirring occasionally with a spatula until the mixture comes to a simmer, then remove from heat.
In a large bowl, whisk together the sugar and egg yolks until fully combined and sugar is dissolved.
While whisking the eggs and sugar, slowly pour in 1/4th of cream mixture and whisk until combined. Add the remaining cream mixture and continue to whisk until fully combined.
Transfer the base back into the medium saucepan and place over medium heat. Stirring constantly, cook until the temperature reaches 165°F–175°F on an instant-read thermometer.
Remove base from heat and pour through a fine-mesh strainer into an empty CREAMi™ Pint. Place pint into an ice bath. Once cooled, place storage lid on pine and freeze for 24hours.
Remove pint from freezer and remove lid from pint. Place pint in outer bowl, install CREAMi Paddle onto outer bowl lid, and lock the lid assembly on the outer bowl. Place bowl assembly on motor base and twist the handle right to raise the platform and lock in place.
When processing is complete, add mix-ins or remove gelato from pint and serve immediately.
