- 1/2 cup water
Level 2 (BOTTOM LAYER OF RACK)
- 2 medium zucchinis, trimmed, cut in 1/4-inch rounds
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- Nonstick cooking spray
Level 3 (TOP LAYER OF RACK)
- 10–12 frozen falafel
TOPPING
- 1/4 cup tahini sauce, well stirred
- 1 tablespoon lemon juice
- 1/2 garlic clove, peeled, grated or finely minced
- 2 tablespoons fresh parsley, chopped
- Kosher salt, as desired
- Ground black pepper, as desired
- Water, as needed

Step 1
Add 1/2 cup water to the bottom of the pot.

In a large bowl, add the zucchini, Parmesan cheese, olive oil, salt, and pepper. Toss until evenly coated. Place the bottom layer of the Deluxe Reversible Rack in the lower position, spray with nonstick cooking spray, then place the rack in the pot. Place the zucchini on the greased rack.

Slide the Deluxe Layer through the lower layer’s handles. Place the falafel on the Deluxe Layer.

Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 350°F, and set time to 10 minutes. Press START/STOP to begin cooking (PrE will display for approx. 20 minutes as the unit steams, then the timer will start counting down).

While the zucchini and falafel cook, prepare the tahini sauce. In a small bowl, add the tahini, lemon juice, garlic, parsley, salt, and pepper. Whisk until combined. If necessary, add water, 1 tablespoon at a time, until you achieve a drizzly consistency.

When cooking is complete, carefully remove the entire rack. Serve the falafel alongside the Parmesan zucchini bites and drizzle everything with tahini sauce.
