INGREDIENTS
- 2 cups water, for steaming
- Nonstick cooking spray
BREAD PUDDING
- 5 large eggs
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/4 cup red onion, peeled, diced
- 1/4 cup roasted red peppers, pat dry, chopped
- 1/2 cup shredded cheddar cheese
- Kosher salt, as desired
- Ground black pepper, as desired
- 2 day-old everything bagels, cut in 1/2-inch cubes
Utensils
- Ninja Loaf Pan(or 8-inch round baking pan or 8 1/2-inch x 4 1/2-inch x 3-inch loaf pan)
- Deluxe Reversible Rack

Step 1
Pour 2 cups water into the pot. Spray Ninja Loaf Pan (or 8-inch round baking pan or 8 1/2-inch x 4 1/2-inch x 3-inch loaf pan) with cooking spray.

Whisk the eggs, milk, and cream in a large bowl until fully combined. Add the onion, peppers, cheese, salt, pepper, and cubed bagels to the bowl and toss, making sure each piece is evenly coated. Let sit for 20 to 30 minutes.

Place bagel mixture into the prepared pan and press into an even layer. The bread should be fully saturated with excess liquid. If there is no excess liquid, pour 1/4 cup additional cream over the top. Place pan on the bottom layer of the Deluxe Reversible Rack in the lower position, then place the rack in the pot.

Close the lid and move slider to STEAMCRISP. Select STEAM & BAKE, set temperature to 320°F, and time to 30 minutes. Press START/STOP to begin cooking (PrE will display for approx. 20 minutes as the unit steams, then the timer will start counting down).

When cooking is complete, carefully remove the rack with the pan. Allow the bread pudding to cool and set for 20 to 30 minutes.

Cut bread pudding into slices and serve warm.
