Cilantro-Lime Chicken and Rice

It’s always good to have at least one chicken and rice dish in your pocket. This one is packed with flavor and has a bright cilantro-lime twist. Cooking the chicken on the Deluxe Reversible Rack above the rice allows all of those great flavors to seep into the rice without weighing it dough.

PREP TIP: If you’d like even more flavor and have more time, marinate the chicken in the olive oil, spices, onion, and garlic in a gallon-size resealable bag for 30 minutes. Then, continue with step 2 of the directions, sautéing the contents of the bag all together.

STORAGE: Store in airtight containers in the refrigerator for up to 4 days or in the freezer for up to 2 months

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon curry powder
  • 1/2 small yellow onion, diced
  • 2 garlic cloves, minced
  • 2 cups long-grain rice
  • 2 1/2 cups chicken broth
  • 2 tablespoons freshly squeezed lime juice
  • 4 tablespoons chopped fresh cilantro, divided
  • Nonstick cooking spray
  • Salad greens, for serving
  • 1 lime, cut into wedges

Method

  • Step 1

    Select SEAR/SAUTÉ on your Ninja® Foodi™ and set the temperature to HI. Select START/STOP to begin. Let preheat for 5 minutes.

  • Step 2

    Pour the olive oil into the Foodi™ pot. Once the oil is hot, add the chicken, salt, pepper, cumin, and curry powder and cook the chicken for 5 to 6 minutes per side, just until it is browned on all sides. Transfer the chicken to a plate and set aside.

  • Step 3

    Add the onion and garlic and sauté for 2 to 3 minutes, just until soft and fragrant. As you are sautéing, use a wooden spoon to scrape up any browned bits at the bottom of the pan. Select START/STOP.

  • Step 4

    Place the rice in the pot in an even layer, then pour in the broth, lime juice, and 2 tablespoons of cilantro. Stir to combine.

  • Step 5

    Spray the reversible racks with cooking spray. Place the Deluxe Reversible Rack in the higher broil position without the Deluxe Layer installed and lower it into the Foodi™ pot over the rice. Place the chicken on the rack.

  • Step 6

    Assemble the pressure lid, making sure the pressure release valve is in the SEAL position. Select PRESSURE and set it to HI. Set the time to 7 minutes. Select START/STOP to begin.

  • Step 7

    When the pressure cooking is complete, allow the pressure to release naturally for 10 minutes. After 10 minutes, quick release the remaining pressure by moving the pressure release valve to the VENT position. Carefully remove the lid when the unit has finished releasing pressure.

  • Step 8

    Lift out the rack with the chicken. Let the chicken cool to room temperature, then portion the chicken and rice into individual containers. In one of those containers, skip the rice and add salad greens off to the side. Garnish each portion with the remaining 2 tablespoons of cilantro and a lime wedge, then label and refrigerate or freeze. (If freezing, store the greens separately and add after thawing.)
