Chipotle-Cheddar Corn Bread

Corn bread is a great appetizer or side, and it is fantastic when made in the SmartLid™. Combining steam with convection baking gives this corn bread an amazing rise and texture. The chipotle and cheddar put a fun spin on the usual, and this chipotle-cheddar corn bread couldn’t be easier to make.

Cooking mode

Step-by-step instruction without your screen going to sleep

  • 3 cups 3 cups water, for steaming
  • Nonstick cooking spray
  • 2 (8.5-ounce) boxes corn bread mix
  • 2 large eggs
  • 2/3 cup whole milk
  • 2 tablespoons ancho chili paste or 2 tablespoons adobo sauce from a can of chipotle chiles
  • 3/4 cup shredded cheddar cheese
  • Step 1

    Pour the water into the pot. Spray the Multi-Purpose Pan with cooking spray

  • Step 2

    In a large bowl, whisk together the corn bread mix, eggs, milk, chili paste, and cheddar cheese until combined and smooth. Pour the batter into the prepared pan.

  • Step 3

    Place the pan on the bottom layer of the Deluxe Reversible Rack in the lower position, then place the rack in the pot

  • Step 4

    Close the lid and move the slider to STEAMCRISP. Select STEAM & BAKE, set the temperature to 385°F, and set the time to 20 minutes. Press START/STOP to begin cooking (PrE will display for about 20 minutes as the unit steams, then the timer will start counting down).

  • Step 5

    When cooking is complete, check for doneness by inserting a wooden toothpick into the middle of the cornbread. If it comes out clean, remove the rack with the pan and let cool for at least 1 hour. If the toothpick comes out with moist crumbs stuck to it, bake for 5 more minutes or until the toothpick comes out clean. Cool before serving.
