Chicken Sandwiches with Crunchy Asparagus Fries

Chicken

  • 1 cup buttermilk
  • 1 cup dill pickle juice
  • 2 thin cut chicken breast cutlets (5-6 ounces each)
  • 1 ½ cups cups all-purpose flour
  • 1 tablespoon garlic powder
  • ½ tablespoon cayenne pepper
  • Kosher salt, as desired
  • Ground black pepper, as desired
  • Vegetable oil, as desired

Asparagus

  • 1 cup panko breadcrumbs
  • 1 tablespoon garlic powder
  • 1 cup shredded Parmesan cheese
  • Kosher salt, as desired
  • Ground black pepper, as desired
  • 1 large egg
  • ½ bunch asparagus, trimmed

To Serve

  • Whole wheat rolls
  • Dill pickle chips
  • Lettuce
  • Sliced tomato
  • Sliced avocado

  • Step 1

    Add the buttermilk and pickle juice to the 4-quart container and mix to combine. Add the chicken, ensuring it is fully covered by the buttermilk marinade. Cover container with lid and place in refrigerator to marinate for at least 1 hour, or up to 8 hours.

  • Step 2

    After marinating, remove container from the refrigerator and strain chicken from marinade. Discard excess marinade from container and wipe clean.

  • Step 3

    In a medium bowl, add flour, garlic powder, cayenne pepper, salt, and pepper, and mix to combine. Toss chicken in flour until evenly coated. Gently tap chicken to remove excess flour. Brush all sides of chicken with vegetable oil.

  • Step 4

    Place crisper plate in the 4-quart container, then place chicken on top. Place the adapter on the container, then install the CRISPi Power Pod in the adapter. Press MODE until BAKE is illuminated, set time to 20 minutes, and press START to begin cooking.

  • Step 5

    Meanwhile, in a medium bowl, add panko, garlic powder, Parmesan, salt and pepper and mix to combine. In second bowl, whisk one egg. Working in batches, toss asparagus in egg wash, followed by the panko mixture.

  • Step 6

    When 5 minutes remain on the timer, remove PowerPod and use silicone tipped tongs to move chicken to one side of the crisper plate. Arrange asparagus next to chicken. Replace PowerPod and press START to resume cooking.

  • Step 7

    When cooking is complete, ensure chicken and asparagus are fully cooked, adding additional time as needed. Place chicken on rolls, and top as desired. Serve hot with asparagus.
