Chicken Fajitas

These Chicken Fajitas are the perfect meal to serve for your next taco night! Don’t forget the margaritas!

TIP: Packaged taco or fajita seasoning isn’t just a quick and easy way to lend flavor to the chicken. The consistency of the powder adds a coating that creates a delicious crust. A combination of breasts and thighs adds variety, but you can use two pounds of just one type if you prefer.

LEVEL 1 (BOTTOM OF POT)

  • 1 cup long-grain white rice, rinsed
  • 1 cup chicken broth
  • 1 (14.5 ounce) can diced tomatoes
  • 2 teaspoons chilli powder
  • 1 teaspoon kosher salt

LEVEL 2 (BOTTOM LAYER OF RACK)

  • 3 small bell peppers, seeds removed, cut in 1/4-inch slices
  • 1 red onion, peeled, cut in 1/4-inch slices
  • 1 tablespoon canola oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

LEVEL 3 (TOP LAYER OF RACK)

  • 1 pound boneless, skinless chicken breasts
  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons canola oil
  • 1 packet taco or fajita seasoning

  • 12 corn tortillas

  • Step 1

    Place all Level 1 ingredients in the pot and stir until combined.

  • Step 2

    Place all Level 2 ingredients in a large bowl and toss to evenly combine. Place the bottom layer of the Deluxe Reversible Rack in the lower position, then cover it with aluminum foil. Place the rack in the pot. Place the peppers and onions on top of the foil. Slide the Deluxe Layer through the lower layer’s handles.

  • Step 3

    Place all Level 3 ingredients in a large bowl and toss until the chicken is evenly coated. Place chicken on the Deluxe Layer of the rack. It’s ok if thigh pieces overlap—they will decrease in size as they cook.

  • Step 4

    Close the lid and move slider to Select STEAM & CRISP, set temperature to 390°F, and set time to 18 minutes. Press START/STOP to begin cooking (PrE will display for approx. 12 minutes as the unit steams, then the timer will start counting down).

  • Step 5

    When cooking is complete, remove the rack layer with the chicken, then the rack layer with the pepper mixture, being careful not to drip liquid that has accumulated on foil.

  • Step 6

    Let chicken rest for 5 minutes. Stir the rice and leave in the pot uncovered while chicken rests. If there is liquid remaining in the pot, move the slider to AIR FRY/STOVETOP, select SEAR/SAUTE, set temperature to 3, and cook for up to 5 minutes, stirring occasionally, until all liquid is absorbed.

  • Step 7

    Thinly slice chicken at an angle. Assemble fajitas on corn tortillas with chicken, peppers, onions, and toppings of your choice. Serve with the rice.
