  • 20 oz shredded potatoes
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 tablespoons freeze-dried or fresh chopped chives
  • 2 tablespoons canola oil
  • 1 lb cooked bacon slices
  • 2-3 Roma tomatoes, sliced
  • 1 head Boston bibb lettuce, washed, patted dry
  • 1/4 cup mayonnaise

  • Step 1

    To install the grill grate, slide it into the front of the base so it hooks in, then press down on the back until it clicks into place. Install griddle on top of grill grate so it sits flat. Select BBQ GRIDDLE, set temperature to 400°F, and set time to 30 minutes. Close the hood and press the dial to begin preheating (preheating will take approximately 10 minutes).

  • Step 2

    While unit is preheating, in a medium bowl, mix the potatoes, flour, eggs, cheese, salt, pepper, seasonings, and chives with a rubber spatula.

  • Step 3

    When unit beeps to signify it has preheated, open hood and add the canola oil to the griddle. Using a large ice cream scoop or 1/4 measuring cup, scoop a level scoop of potatoes and place on one side of the griddle. Flatten the batter down into a pancake shape. Repeat with remaining batter. You should be able to fit 3 latkes on the griddle at a time. Leave hood open to begin cooking.

  • Step 4

    After 7 minutes, flip latkes, close hood, and cook for another 7 minutes. When cooking is complete, open hood and remove latkes from griddle. Repeat with remaining batter.

  • Step 5

    When cooking is complete, evenly cover 2 latkes with mayonnaise on one side. Top one half with bacon, lettuce, and tomato. Close the sandwich with the other latke. Repeat with remaining ingredients.
