Blackened Tilapia with Cilantro

This is an easy and delicious meal perfect for a weeknight! In less than 25 minutes you can have this on the table.

TIP: Switch it up and serve with mango salsa instead of avocado salsa!

Step-by-step instruction without your screen going to sleep

  • 2 cups white rice, rinsed
  • 2 cups water
  • 1/4 cup blackening seasoning
  • 4 (4 oz) tilapia fillets
  • 2 tablespoons freshly squeezed lime juice, divided
  • 1 bunch cilantro, minced
  • 1 tablespoon extra-virgin olive oil
  • 2 avocados, diced
  • 1 large red onion, diced
  • 2 roma tomatoes, diced
  • freshly ground black pepper
  • salt

  • Step 1

    Place the rice and water in the pot and stir. Assemble the pressure lid, making sure the pressure release valve is in the SEAL position.   

  • Step 2

    Select pressure and set to HI. Set time to 2 minutes select START/STOP to begin. 

  • Step 3

    Place the blackening seasoning on a plate. Dredge the tilapia fillets in the seasoning.

  • Step 4

    When pressure cooking is complete, allow pressure to naturally release for 10 minutes. After 10 minutes, quick release remaining pressure by turning the pressure release valve to the VENT position. Carefully remove fluid when unit has finished releasing pressure.   

  • Step 5

    Transfer the rice to a large bowl and stir in 1 tablespoon of lime juice and half the cilantro. Cover the bowl with aluminum foil and set aside. 

  • Step 6

    Please the reversible rack in the pot and arrange tilapia fillets on top. Close Crisping lid.   

  • Step 7

    Select BROIL and set a time to 10 minutes. Select START/STOP to begin.

  • Step 8

    In a medium bowl, stir together the remaining cilantro, remaining 1 tablespoon of lime juice, olive oil, avocado, onion, tomato, and season with salt and pepper.   

  • Step 9

    When cooking is complete, open the lid and lift the rack out of the pot. Serve the fish over the rice and top with avocado salsa.
