Blackened Shrimp and Rice Bowls with Mango-Pineapple Salsa

TIP: Place shrimp on 6-inch skewers for easier flipping. If you like spicier shrimp, increase the cayenne pepper to 1/4 teaspoon.

  • 1 cup long-grain white or basmati rice
  • 1 cup water
  • 1 1/2 teaspoons kosher salt, divided
  • 3 tablespoons extra virgin olive oil, divided
  • 3 tablespoons fresh lime juice, divided
  • 1 pound (31–35) uncooked large shrimp, peeled, deveined, tails removed (thawed if frozen)
  • 1 1/2 teaspoons crab seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sugar
  • 1 mango, peeled, chopped
  • 1 small red bell pepper, chopped
  • 1/2 cup pineapple, chopped
  • 1/4 cup red onion, peeled, chopped
  • 1 avocado, sliced, for serving
  • 3 scallions, finely sliced, for serving

  • Step 1

    Combine rice, water, and 1 teaspoon salt in the pot. 

  • Step 2

    Assemble pressure lid, making sure the pressure release valve is in the SEAL position. Select PRESSURE and set to HIGH. Set time to 2 minutes. Select START/STOP to begin. 

  • Step 3

    When pressure cooking is complete, quick release the pressure by moving the pressure release valve to the VENT position. 

  • Step 4

    While pressure is releasing, toss shrimp with remaining 2 tablespoons oil, crab seasoning, smoked paprika, garlic powder, onion powder, and sugar. 

  • Step 5

    Carefully remove lid when unit has finished releasing pressure. Stir remaining 1 tablespoon oil and 1 tablespoon lime juice into the rice. 

  • Step 6

    Place reversible rack in pot over rice, making sure rack is in the higher position. Place shrimp on rack in an even layer, allowing any excess spice mixture to drip onto rice. 

  • Step 7

    Close crisping lid. Select BROIL and set time to 7 minutes. Select START/STOP to begin. After 4 minutes, open lid and flip shrimp. Close lid to resume cooking. Cooking is complete when shrimp are fully cooked and spices are beginning to brown. 

  • Step 8

    While shrimp is cooking, stir together mango, bell pepper, pineapple, red onion, remaining 1/2 teaspoon salt, and remaining 2 tablespoons lime juice in a large bowl.

    When cooking is complete, serve shrimp over rice, topped with salsa, avocado slices, and scallions.
