Beef Barley Soup

  • 1 tablespoon canola oil
  • 2 1/2 pounds uncooked beef stew meat, cut in 1-inch pieces
  • 4 carrots, peeled, diced
  • 4 stalks celery, diced
  • 1 onion, peeled, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 2 tablespoons tomato paste
  • 1 can (14.5 ounces) diced tomatoes
  • 6 cups beef broth
  • 1 cup pearl barley
  • Step 1

    Select SEAR/SAUTÉ and set to HIGH. Select START/STOP to begin. Allow to preheat for 5 minutes. 

  • Step 2

    After 5 minutes, add oil, then add beef in batches, browning it on all sides. Remove beef and set aside. 

  • Step 3

    Add carrots, celery, onion, oregano, salt, and pepper to pot. Cook for 5 minutes. 

  • Step 4

    Add tomato paste, diced tomatoes, broth, and barley to pot and stir to combine. Place browned beef back in pot. Select START/STOP to turn off SEAR/SAUTÉ. 

  • Step 5

    Assemble pressure lid, making sure the pressure release valve is in the SEAL position. Select PRESSURE and set to HIGH. Set time to 22 minutes. Select START/STOP to begin. 

  • Step 6

    When pressure cooking is complete, allow pressure to naturally release for 10 minutes. After 10 minutes, quick release any remaining pressure by moving the pressure release valve to the VENT position. Carefully remove lid when unit has finished releasing pressure. 

  • Step 7

    When cooking is complete, soup is ready to serve.
