  • 1 head cauliflower, cut into 1-inch florets (approx. 30 ounces)
  • 1/4 cup 1/4 cup chicken stock
  • 1/4 cup whole milk


  • 1 tablespoon vegetable oil
  • 1 medium red onion, peeled, diced
  • 3 cloves garlic, peeled, minced
  • 1 1/2 pounds ground turkey
  • 2 large eggs, beaten
  • 1/2 cup bread crumbs
  • 1/4 cup whole milk
  • 2 teaspoons kosher salt
  • 1 tablespoon packed brown sugar
  • 2 tablespoons smoked paprika
  • 1 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon cayenne pepper
  • 10 slices bacon

TOPPING (optional)

  • 1/2 cup barbecue sauce


  • Deluxe Reversible Rack (bottom layer only)

  • Step 1

    Close the lid and move slider to AIR FRY/STOVETOP. Select SEAR/SAUTÉ and set to H-5. Open lid and select START/STOP to begin preheating. Allow unit to preheat for 5 minutes.

  • Step 2

    Add the oil and onion and cook until softened, about 5 minutes. Transfer the onion to a large bowl and allow to cool slightly.

  • Step 3

    When onions are cooled, add garlic, turkey, eggs, bread crumbs, milk, salt, brown sugar, smoked paprika, black pepper, cumin, white pepper, and cayenne pepper to the bowl. Mix until fully combined.

  • Step 4

    Transfer the turkey mixture to a cutting board lined with parchment paper and form the mixture into a 6″ x 5″ loaf.

  • Step 5

    On a clean work surface, prepare the bacon. Lay 5 pieces of bacon horizontally, then weave the remaining 5 pieces of bacon through vertically.

  • Step 6

    Transfer the bacon to the top of the meatloaf, then tuck the ends of the bacon under the loaf. Using a knife, trim the parchment paper, leaving a 1-inch border around the meatloaf.

    Add all Level 1 ingredients to the pot. Place the bottom layer of the Deluxe Reversible Rack in the lower position, then place the rack in the pot. Carefully transfer the bacon-wrapped meatloaf, with the parchment paper, to the rack.

  • Step 8

    Close the lid and move slider to STEAMCRISP. Select STEAM & CRISP, set temperature to 325°F, and set time to 20 minutes. Press START/STOP to begin cooking (PrE will display for approx. 15 minutes as the unit steams, then the timer will start counting down).

  • Step 9

    When cooking is complete, carefully remove the rack with meatloaf. Brush the top with barbecue sauce, if desired. Allow the meatloaf to rest for 5 minutes before slicing.

  • Step 10

    While the meatloaf is resting, mash or use an immersion blender to puree the cauliflower in the pot. Serve the cauliflower mash with the meatloaf.
