Step-by-step instruction without your screen going to sleep

  • 2 cups long grain white rice
  • 6 1/2 cups whole milk, cold, divided
  • 1/2 cup granulated sugar
  • 3 strips lime zest
  • 3 cinnamon sticks
  • 1/4 teaspoon kosher salt
  • 3/4 can (10.5 ounces) sweetened condensed milk
  • Ground cinnamon, for garnish
  • Step 1

    Place rice, 6 cups milk, sugar, lime zest, cinnamon sticks, and salt into the pot. Stir to combine. 

  • Step 2

    Assemble pressure lid, making sure the pressure release valve is in the SEAL position. Select PRESSURE and set to HIGH. Set time to 2 minutes. Select START/STOP to begin. 

  • Step 3

    When pressure cooking is complete, allow pressure to release naturally for 10 minutes. After 10 minutes, quick release any remaining pressure by moving the pressure release valve to the VENT position. Carefully remove lid when unit has finished releasing pressure. 

  • Step 4

    Add sweetened condensed milk to the pot and stir to incorporate.

    Select SEAR/SAUTÉ and set to MED. Select START/STOP to begin. Allow to simmer for 5 minutes, stirring frequently. 

  • Step 6

    Carefully remove pot to a heat-safe surface. Stir in the remaining milk and allow to cool for 15 minutes. 

  • Step 7

    Serve warm after 15 minutes, or cool to room temperature then refrigerate and serve cold, garnished with ground cinnamon.
