Apple Cranberry Oatmeal

  • 2 cups gluten-free steel-cut oats
  • 3 3/4 cups water
  • 1/4 cup apple cider vinegar
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup dried cranberries, plus more for garnish
  • 2 apples peeled, cored, and diced
  • 1/8 teaspoon sea salt
  • Maple syrup, for topping

Utensils

  • Step 1

    Add the oats, water, vinegar, cinnamon, nutmeg, vanilla, cranberries, apples, and salt to the pot. Assemble the Pressure Lid, making sure the pressure release valve is in the SEAL position. Select Pressure and set to High. Set the time to 11 minutes. Select START / STOP to begin.

  • Step 2

    When pressure cooking is complete, allow the pressure to naturally release for 10 minutes, then quick release any remaining pressure by moving the pressure release valve to the VENT position. Carefully remove the lid when the pressure has finished releasing.

  • Step 3

    Stir the oatmeal and serve immediately. Top with maple syrup and more dried cranberries, as desired.
