Chicken Pad Thai

TIP: Feel free to make your own pad Thai sauce. I find many of the ready-made sauces are really good, inexpensive, and much more convenient. For added convenience you can also use the chopped garlic from a jar, but the flavor difference between that and fresh chopped garlic is noticeable.

TIP: Slicing chicken is much easier when it’s partially frozen.

Step-by-step instruction without your screen going to sleep

  • 1 pound boneless, skinless chicken breast, cut in 1/4-inch pieces
  • ½ teaspoon kosher salt
  • ½ teaspoon white pepper
  • ¼ teaspoon garlic powder
  • 1 tablespoon cornstarch
  • 3 tablespoons avocado oil, divided
  • 1 1/2 tablespoons dried shrimp, finely minced
  • 1 small shallot, peeled, sliced
  • 1 tablespoon minced garlic
  • 3 cups cooked pad Thai noodles
  • 1 cup pad Thai sauce
  • 2 large eggs, beaten
  • 4 green onions, cut in 3-inch pieces (discard whites)
  • ¾ cup bean sprouts
  • ¼ cup peanuts, finely chopped
  • 1 lime, cut into wedges
  • 0.21oz ⅓ cup cilantro, finely chopped

  • Step 1

    To install the grill grate, slide it into the front of the base so it hooks in, then press down on the back until it clicks into place. Place griddle on top of grill grate so it sits flat.  

  • Step 2

    Select BBQ GRIDDLE, set temperature to 400°F, and set time to 20 minutes. Close hood and press the dial to begin preheating (preheating will take approximately 10 minutes). 

  • Step 3

    While the unit is preheating, prepare the chicken. Place the chicken, salt, pepper, garlic powder, and cornstarch in a large bowl and toss until evenly coated.  

  • Step 4

    When the unit beeps to signify it has preheated, open hood and add 1 1/2 tablespoons avocado oil to the griddle. Allow oil to heat for 1 minute. 

  • Step 5

    Place the prepared chicken on the griddle and cook for 4 minutes, flipping often. When cooking is complete, remove chicken from the griddle and set aside. 

  • Step 6

    Add the remaining avocado oil to the griddle, immediately add the shrimp and cook for 1 minute. Add the shallot, cook for 1 minute then add the garlic and cook for 2 minutes.  

  • Step 7

    Add the cooked pad Thai noodles and pad Thai sauce to the griddle and gently toss until the noodles are evenly coated. Move the stir fry to one side of the griddle.  

  • Step 8

    Add the eggs to the other side of the griddle and cook until desired doneness. Then combine with the noodles. Add the scallions and bean sprouts and toss until combined.  

  • Step 9

    When cooking is complete, serve the chicken pad Thai with peanuts, lime juice, and cilantro.
