Garlic Herb Crusted Lamb
A beautiful charred crust of herbs and garlic cover this leg of lamb. The aromas linger as you grill this up. Be patient, as it will be worth the wait. You’ll be able to taste each herb in the seasoning in every bite.
VARIATION TIP: Try a balsamic honey mustard glaze. Instead of using the garlic-herb mixture, marinate the lamb in 1 cup balsamic vinegar, then coat it with 1/2 cup yellow mustard and 1 cup honey asyour “crust.”

- 1/4 cup red wine vinegar
- 3 garlic cloves, minced
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 tablespoon ground cumin
- 1 tablespoon dried parsley
- 1 tablespoon dried thyme
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Juice of 1/2 lemon
- 1 (3-pound) boneless leg of lamb

Step 1
In a large bowl, mix together the vinegar, garlic, garlic powder, paprika, cumin, parsley, thyme, oregano, salt, pepper, and lemon juice until well combined—the marinade will turn into a thick paste. Add the leg of lamb and massage the marinade into the meat. Coat the lamb with the marinade and let sit for at least 30 minutes. If marinating for longer, cover and refrigerate.

Step 2
Plug the thermometer into the unit. Insert the Grill Grate and close the hood. Select GRILL, set the temperature to LO, and set the time to 30 minutes. Insert the Smart Thermometer into the thickest part of the meat. Select START/STOP to begin preheating.

When the unit beeps to signify it has preheated, place the lamb on the Grill Grate. Select the BEEF/LAMB preset and choose MEDIUM-WELL or according to your desired doneness. Close the hood and cook for 30 minutes.

Step 4
After 30 minutes, which is the maximum time for the LO setting, select GRILL again, set the temperature to LO, and set the time to 30 minutes. Select START/STOP and press PREHEAT to skip preheating. Cook until the Smart Thermometer indicates that the desired internal temperature has been reached.

When cooking is complete, remove the lamb from the grill and serve.
